My problem is that I currently live in a 1bd condo and don't have the MOST room in the world.  I think if I can get a couple of decent beers out of the Mr. Beer I will probably jump to 5 gallon batches, but for now the Mr. Beer is making my life pretty simple.

For now I am just surfing CL and if I see a GREAT deal I will prob jump on it.

Alan, sounds like you are doing it the right way!  I'd love to get a few of my friends interested and start doing brew nights.  I envision cigars, whiskey, and maybe a game of poker as we brew up a storm  banana

We need to come up with a brewery name.  I've been thinking about it for two months, but I've yet to find a good name.  I want something understated, and simple, without being forgettable...  I like simple names, like Stone, ABC (Appalacian Brewing Co.), LBC (Lancaster " "), Troegs, etc.  I love them, but think names like Dogfish Head are kind of odd, and many people get an impression of what they'll be tasting from a name.

The one I keep coming back to is HCBC (Harrisburg City Brewing Co.), but who knows how long we'd be here, or even if we'd rent space in/near the city...

Got most of my stuff today (aside from a wort chiller which the guy I'm working with is letting me borrow) and the Maibock ingredients.  This kit was designed to be fermented, not lagered, so hopefully it'll be fine.  I got an extra yeast packet as well and I'll aerate the hell out of the wort on the stores recommendation to make it gets going properly.  I also threw my hat in the ring for representation at this years GABF, fingers crossed I'll be serving at least one day.

I know the name blends in too well with the picture of the capitol, and overall, it's kind of plain.  I made it 3.5" tall, by 3" wide arbitrarily...

I like it, but I would move the picture of the capitol down underneath the "Brewing Company" and maybe overlapped by the top of the ribbon if the image is too big.

Looks nice!  Can you find a better pic of what I am assuming is the capital, current one looks a little blurry.

Also, I tend to be a fan of humorous tag lines, yours sounds a little too ummm elitist for my taste... maybe something like, 'Great brews for those who can appreciate/enjoy them'

I cropped it to cut out the trees, and converted it to black/white sketch mode or whatever, and made the white background transparent.  I'd do the real version with Photoshop, so hopefully I can do better...

Colb, that's the part I spent the least amount of time on.  Someone said that on a thread on HomebrewTalk, so I used it to fill the space.

Do any of you guys listen to any shows on The Brewing Network?  I've been making my way through Brew Strong, which is a podcast hosted by Jamil Zainasheff and John Palmer.  It's super nerdy and in depth, but I love it so far.  Getting to know the inner workings of homebrewing.

Wow...  We brewed the 90 Minute IPA last night, and boy did that take a long ass time...  We had hoped to brew both beers that I have ingredients for, but we started at 3, and weren't finished racking the IPA to primary until 7:30.

It was pretty intense.  Rolling boil for 90 minutes, adding hops every 7 minutes for the whole boil.  Plus it gets dry-hopped when racked to secondary.  I've calculated 7.99% ABV right now, based on the target final gravity, but we'll see what my actual statistics are when it's done fermenting.

Warrior, amarillo, and simcoe.

Bittering hops were 1/2 oz. 2 oz. & 3/4 oz. respectively.  Dry hopping will be 1/2 oz. 1 oz. & 1/4 oz.

The simcoes smelled amazing.  I'd like to use them again based on the outcome of this batch.

We did the Maibock I posted a while back this weekend with a few minor tweaks (.25oz more bittering hops, Chinook instead of Perle, and double pitching with a packet of Safale US-05).  Wonderful smelling brew that's bubbling away in the carboy.

I'd like to get away from pellet hops.  There's a huge amount of green sludge left in my brew kettle each brew, and this one was so hoppy, it clogged the strainer I use to airate/strain the wort as it goes into primary.  Do you other guys still use pellets, or is anyone else using leaf/whole hops?

I used leaf and they do the same thing.  We had to clean out the strainer 4 times, and that was only 4oz total of hops.
