Sightseeing tips requested

I'm driving the Aero home on Thursday, with having members throughout the states I'm hoping I can get some decent recommendations for food or sightseeing along the way.
These are the cities we plan on stopping in. They're mostly just pitstops as we have a somewhat tight schedule to keep but I wouldn't mind some local delicacies if there are any.

Philadelphia, PA -> Baltimore, MD -> Washington, DC -> Richmond, VA -> Charlotte, NC -> Knoxville, Nashville, TN -> St. Louis, MO -> Kansas City, MO -> Colby, KS -> Denver, Grand Junction, CO -> Price, Salt Lake City, UT.

Obviously plenty of cities in between and I'm still not quite sure how fuel consumption will determine where we stop, but that's the gist of it. Some of these cities are just because we have family there, we're taking a much more indirect route than if we just went straight from PA to UT.

I know I want some excellent seafood when I'm the closest I'll have ever been to the east coast and my lady's from Tennessee and has promised to satiate my BBQ craving. Other than that I'm just looking for some tips to make the ~2700 mile trip a little less boring.

Thanks for any advice. The excitement of greeting the new car is eating at me  driving

The whole drive through CO should be beautiful, I've done that more times than I can count.  Get some spring skiing in!

The cherahola skyway, tail of the dragon, and Fontana damn are all must see stops on the NC TN border. Great camping in that area too if that's your thing.
